GfreeWifey’s Gluten-free Lasagna

Basic Gluten-free Meat Lasagna

WHAT YOU NEED
– 1 pound ground beef
– 1 Onion, diced
– 3 Garlic cloves
– 1 Jar of strained tomatoes Or your favourite pasta sauce
– Gluten-free Lasagna noodles
– Optional 1/2 cup grated mozzarella cheese

WHAT TO DO
– In a large pan, cook diced onions, add ground beef & fry until cooked. Add garlic cloves & strained tomatoes, simmer on low for 30 minutes with any seasoning you prefer.
– In the Deep Baking dish ( I use my loaf pan, you could use a 9×9 or 9×13)  Start layering beginning with a generous scoop of the meat sauce in the bottom then noodles. Do not overlap the noodles (be sure to make life easier & use the no-boil needed noodles or fresh-made pasta)
– Optional top with shredded cheese.
– Bake for 20-30 minutes at

 

Veggie Lovers Lasagna

  • Follow basic gluten-free meat lasagna recipe but add whatever veggies you love when cooking the onions. I love to add diced orange and red peppers, baby spinach, sliced mushrooms, diced zucchini.

WANT TO STEP IT UP A NOTCH!

Try lasagna rolls. A little more work but fun and pretty way to present a special meal.

Turkey Spinach Lasagna Rolls

WHAT YOU NEED
– 1 pound ground turkey
– A pack baby spinach
– 1 Onion, diced
– 3 Garlic cloves
– 1 container of ricotta cheese
– Lasagna noodles (cooked or fresh pasta)
– Seasoning of your choice
– 1 Jar of your favourite Tomato sauce
– 1 cup shredded mozzarella

WHAT I DO
– If you are not using fresh pasta you will need to pre-cook the lasagna noodles.
– In a large pan with a 1 Tbsp of EVOO fry, diced onions then add the ground turkey and seasoning of your choice, fry until cooked remove from pan place in a dish to cool.
– Cook down the spinach and add the minced garlic. cool then mix with the ricotta cheese.
– In an oven-safe dish spread a giant scoop of pasta sauce.
– Layout the noodle then spread a spoon of the ricotta spinach mix, layer on top of that. Roll it up and place in in the sauced dish
– Once all rolls are placed cover with remainder of sauce & top with shredded cheese (optional)
– Bake at 350 for 20 – 30 minutes.

Chocolate Strawberry Lasagna Dessert Rolls

WHAT YOU NEED
– Cooked or fresh pasta noodles
– Strawberries, sliced and soaked overnight in an airtight container with honey or sugar to sweetener.
– Mascarpone cheese
– icing sugar
– Chocolate mousse (or Avocado mousse)

WHAT TO DO
– cook the noodles
– mix Marscarpone cheese with icing sugar
– layout noodles & layer marscapone, berries and top with mousse and sprinkle with more icing sugar and serve.
