I have been getting frustrated when I go through the drive-through and get a coffee on the way to work that I cant get a bagel or muffin or any other quick eat, so I have started whipping up these quick gems every week. In the time it takes to brew a pot of coffee I have em in the oven and cooking. My sister took the recipe from my mom and I snagged it from her fridge.
SO HERE IT IS SIMPLE AND QUICK …
Cream together (that is a fancy way of saying mash with a fork till it looks like this)
1/4 Cup of softened butter and 1/2 Cup of sugar
MASH 3 RIPE BANANA WITH A FORK …
Beat 2 egg into the bananas with that same fork … (the fewer dishes the better cuz it’s 6 am and your coffee is brewing you don’t want to be doing dishes) …
Dump the banana/egg mix into the sugary butter and mix your wet ingredients all together.
NOW TOSS IN ALL YOUR DRY INGREDIENTS AND MIX WELL
1 1/3 C GLUTENFREE FLOUR
pinch o salt
1 tsp Xanthum gum (not necessary if you don’t have it on hand)
NOW DUMP THE WHOLE MIX INTO A LOAF MAN AND BAKE AT 325 FOR 45-55 MINS
WHAT I PREFER IS TO PORTION INTO MINI MUFFIN bite-size portions LINED WITH PAPER SO THEY COME OUT EASY AND TOP WITH YOUR FAVOURITE ADDITIONS THEN BAKE AT 325 FOR 40-50 MINS … THIS IS ENOUGH TIME TO GET READY FOR WORK, READ A CHAPTER OF A BOOK, GET A SWEATY WORKOUT IN OR ACCOMPLISH ANY PRODUCTIVE TASK TO START YOUR DAY .. YOU WILL THEN BE REWARDED WITH A TASTY MORSEL OF YUM.
