2 C sugar
2 C gfree flour
1 tbs baking soda
2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
2 tbs Xanthum gum
1 15oz can pure pumpkin (make sure its gluten-free)
1 C oil
1 tsp vanilla
Combine all the wet ingredients to all of the dry ingredients and mix well. scoop into lined muffin tins (or a 9×13 pan or a bunt) and bake at 350C for 20-30 mins. If you make the bite-size muffins like me be sure not to burn the bottoms and bake them on the top rack.
Once cooled I decked mine out in a simple cream cheese frosting (mix 1/2 cup butter with 1/2 cup cream cheese and 2-3 cups icing sugar) then pressed them into crushed pumpkin seeds or hemp hearts.
